Vidal Ice Wine 2024
Vintage Notes:
The very first wine of 2024! Technically from the 2023 growing season, we did not have the necessary weather to pick until January 17th, 2024. Because vintage is legally determined by the pick date, not the season. An unusually warm winter and early spring lead to budbreak almost a month early. Some wet stretches in the summer, but dried up and resulted in a beautiful autumn. The winter of 2023 was much milder than expected, and we were worried we would not have the conditions to pick ice wine. But January gave us a nice stretch of cold weather and we were able to pick the grapes at 8F!
Rich and complex with powerful stone fruit aromas. Wildflower honey, dried apricots, and summer peaches on the nose. Unctuous on the palate with notes of citrus buttercream, candied orange peel, and nectarine. Delicious on its own, but a wonderful accompaniment to your favorite dessert. Try it with blue cheese drizzled with honey and walnuts for a truly perfect pairing.

Winemaker Notes:
Picked at 8F in the snow at 3am with the most dedicated Knapp employees. We were able to get the fruit into the press before dawn, where it then pressed for over 100 hours. The juice came in at over 39 Brix, higher than we were expecting. A long, slow fermentation of almost a month before the yeast naturally started to senesce. Aged in neutral French barrels for four months before bottling unfined.
