Baco Noir 2023
Vintage Notes:
An unusually warm winter and early spring lead to budbreak almost a month early. The early budbreak and extreme frost on May 18th damaged yields throughout the Finger Lakes, although Knapp recovered well. Periods of intense rainfall with stretches of warm and dry weather, resulting in a statistically 'average' year but felt anything but average. The rain abated by August and we were able to let the grapes take their time ripening in perfect Autumn weather.
Tasting notes
Lovely notes of vanilla and toasted oak complement the chewy tannins and bright acidity of the Baco Noir. Fruit forward and intense, with a deeply violet color, this wine is big and unapologetic. Dark chocolate, fruit leather, and cedar.

Winemaker Notes:
We pruned the Baco Noir for a smaller cropload this spring and it ripened beautifully with small berries, resulting in ideal ripening profile with a high concentration of skins during fermentation, creating deep color and a beautiful tannin structure. Fermented in small batches and punched down twice daily by hand for 12 days before pressing. It was aged for 12 months with French oak on the heavy lees before bottling in November. A small amount of Saperavi was included in the blend for complexity.
